Turkey Cooking Tips - Thanksgiving 2017

Are you in charge of cooking the Thanksgiving Turkey this year? Here are a few reminders for all the chefs out there. Buying the Right Size Bird It actually depends on how many people you are serving. Smaller turkeys will have less meat and more bone in comparison to their larger counterparts. If you're cooking a bird that's less than 12 lbs., you should plan for 2 lbs. per serving. Anything larger, you can plan on 1½ lbs., per person. Pro Tip: The turkey may be the star of the Thanksgiving meal, but lots of side options can mean your guests may opt for less meat. Take this into account when selecting your bird. The Great Stuffing vs. Dressing Debate  Different regions of the country are at odds with the correct terminology to use for this delicious dish that essential to every Thanksgiving meal. Outside of the Southern United States, it's dressing if it's cooked outside of the turkey, and stuffing if it's cooked inside. Regardless of your naming preference, you'll want to keep one important thing in mind. If you're cooking your stuffing/dressing inside the turkey, you need to make sure to bring the internal temperature (center of the stuffing) to at least 165°F. Pro Tip: If you're committed to cooking the traditional ‘stuffing' inside the bird, plan on bringing it to full temperature outside of the bird after your meat has reached the right temperature. Pending Home Sales Sluggish as Low Supply Rears Its Head Pending home sales were sluggish in April as low supply reared its head, down 1.3 percent in the National Association of REALTORS® (NAR) Pending Home Sales Index (PHSI). The PHSI posted 109.8 in April, down from 111.3 in March. The Index is based on contract signings. "Much of the country for the second straight month saw a pullback in pending sales as the rate of new listings continues to lag the quicker pace of homes coming off the market," says Lawrence Yun, chief economist at NAR. "REALTORS® are indicating that foot traffic is higher than a year ago, but it's obviously not translating to more sales. The West fared best in April, with pending home sales up 5.8 percent to an Index reading of 100.0, though still down 4.2 percent from one year ago. The Midwest saw a 4.7 percent decrease in the Index to 104.4, while the South saw a 2.7 percent decrease to 125.9, and the Northeast, a 1.7 percent decrease to 97.2. Scarce supply will remain the status quo, according to Yun, unless more homes are made available, especially from the investor side. Homeownership Rates in the United States remain steady According to the US Census Bureau's recent Quarterly Housing Vacancies and Homeownership report, rates of homeownership look to be holding steady. The homeownership rate clung to 63.6 percent in the first quarter of 2017, virtually unchanged from 63.7 percent the quarter prior and 63.5 percent the year prior. Additional findings from the study include: The Midwest held the highest homeownership rate in the first quarter, at 67.6 percent, while the West held the lowest at 59 percent. Homeownership rates in the first quarter were also highest among homeowners aged 65 and older, at 78.6 percent, and lowest for homeowners aged 35 and younger at 34.3 percent. The rate of homeownership among Hispanic Americans markedly rose for the second straight year in 2016 - a trend against the current par for the course and currently stands at 46.6 percent. The renter vacancy rate came in at 7 percent. Breaking this down more specifically, the renter vacancy rate was highest outside "Metropolitan Statistical Areas" or "MSAs" at 8.7 percent, followed by inside principal cities at 7 percent and in the suburbs at 6.5 percent. The median asking sales price for vacant for sale housing in the first quarter was $176,900. The median rent for vacant for rent housing, over the same period, was $864.
